Citrus-Glazed Salmon
2 tablespoons fresh orange juice
½ tablespoon honey
1 tablespoon balsamic vinegar
1 clove garlic, peeled and smashed with the side of a knife
1 teaspoon fresh tarragon, chopped
1 teaspoon fresh basil, chopped
1 teaspoon fresh chives, chopped
1 teaspoon Dijon mustard
½ teaspoon orange zest
olive oil for the grill
1 4-6ounce piece of salmon
salt and pepper

For the Citrus Glaze
ï‚· With a whisk, combine orange juice, honey, vinegar and garlic in a small saucepan or saute pan.
 Over medium-low heat, let the liquids reduce by about ½, or until it has a slightly syrupy consistency.
ï‚· Remove from the heat
ï‚· Stir in tarragon, basil, chives, Dijon and orange zest. Set aside.

For the Salmon
ï‚· Heat a grill or grill pan over medium-high heat. Rub the grill with an oiled paper towel to prevent the fish from sticking.
ï‚· Season both sides of the salmon with salt and pepper. Place the salmon in the pan and grill for about 3-4 minutes. Flip the salmon and continue cooking for another 3-4 minutes for medium-rare.
ï‚· Spoon the glaze over hte grilled salmon.

Spinach and Parmesan Rice Cakes
½ shallot, peeled and finely chopped
1 small clove garlic, peeled and minced
1/3cup cooked Lundberg Farms Golden Rose Rice (any brown rice will do)
1/4 cup chopped frozen spinach, defrosted and drained well
1 tablespoon shredded parmesan cheese
1 egg white
salt and pepper
olive oil for sauteing

ï‚· Saute shallots and garlic in a small saute pan until the shallots are translucent. Let cool.
ï‚· Combine rice, spinach, shallot/garlic mixture, parmesan cheese, egg white and salt and pepper in a bowl and mix well.
ï‚· Heat a saute pan over medium heat. Coat the pan with olive oil.
ï‚· Form the rice mixture into a patty and place it in the pan. Cook for about 2-3 minutes, then carefully flip using a thin metal spatula. Let cook another 2-3 minutes, or until the outside is golden brown.

Grilled Asparagus
3-4 asparagus spears, ends trimmed
olive oil
salt and pepper

ï‚· Heat a grill or grill pan over medium-high heat
ï‚· Coat the asparagus with olive oil, sprinkle with salt and pepper
ï‚· Grill the asparagus about 2-3 minutes per side depending on the thickness. It should be crisp-tnder but never mushy.
